Pro Tips

How to Make Creamy Pea, Greens & Cottage Cheese Soup

Step 1: Soften the Vegetables

Heat 2 tablespoons olive oil in a large saucepan over low to medium-low heat. Add 1 finely sliced leek, 1 finely chopped onion, 2 finely sliced celery sticks, 2 crushed garlic cloves, and a pinch of salt.

Cook gently for 10–15 minutes, stirring occasionally, until everything is very soft and sweet but hasn’t taken on any color.

Step 2: Build the Broth

Pour in 1 litre water. Add 1 bay leaf, parsley stalks and/or a small handful of chives, and 1 small Parmesan rind.

Take the pan off the heat. Add 2 heaped tablespoons cottage cheese and blend with an immersion blender until beautifully smooth and creamy.

Taste, then season with salt and freshly ground black pepper. Add another splash of water if you’d prefer a thinner consistency.

Reheat gently on the stove, adding a splash of water if the soup has thickened. Avoid boiling it aggressively, which can dull its lovely green color.

The soup can also be frozen for around 2 months, although the color and cottage-cheese texture may change slightly after thawing. Defrost overnight in the refrigerator and blend briefly after reheating if needed.
